How much oil: Put the turkey into the empty pot, fill with WATER so the water is just covering the turkey. Remove the turkey and mark the water line. This is how much oil you'll need.

@theotherguy245689 You want an oil that has a very high smoking point for this. Your oil has to be really, really hot in order to cook this correctly. Otherwise, you will end up with a greasy bird. The high heat seals in the juices and the skin does not allow the oil to penetrate into the meat. So, peanut or vegetable oil is what you want. Thanks for coming by!

That was what i was intially thinking but i inject the turkey the night before. The breast comes out perfect, thighs and legs come out undercooked and the skin comes out completely black and charred. I was thinking that next time i would let the temperature settle at 350 degrees for a few minutes then put the turkey or put the turkey in at a much lower temperature 250-300 and slowly let it reach 350.
PLEASE HELP. Every time i fry a turkey it starts to blacken not even halfway through cooking. Ultimately resulting in a completely black Turkey. I use 12-14 lb birds and use both injection and rub to marinade. Once the peanut oil is at 350 degrees i put the turkey in for 3 min per LB and it never fails to burn. I fry my turkey with a masterbuild propane fryer kit. What am i doing wrong?
@romeo1775 Hi Romeo! My first thought was you were using the wrong oil but you are not. The only thing I can think of is your marinade. I think you might be injecting the turkey in the breast and thigh area and not letting the liquid absorb. You have to let it rest for a good hour - preferably in the fridge - so that this does not happen. Maybe you could try frying one without injecting it at all. Try brining it the night before and drying it very well before you fry it. Hope this helps!

A good tip for frying.. just when your oil is ready, and you are going to drop the bird.. Turn the fire off, until the bird is submerged, then turn the fire back on. Just an extra safety point.

@dinah259 Brining will hydrate your turkey and make the meat really moist. I always brine my turkey when I roast it. However, when I deep fry it I usually do not because the hot oil seals in the turkey's juices and it cooks very quickly. This keeps the meat tender and moist so I don't find it necessary. Looks good..I always use peanut oil and I use injectable marinade also...after cooking I place mine in a large dish and cover with foil for 20 minutes...you can do this if you are driving to someone elses house and it will stay hot for 45 minutes to an hour
I got caught rubbing my turkey and tried to season my cavity with a carrot, but i found that it didn't explode in the oil because it was dry. Last time I did it a little wet and it just spurted everywhere.

I got caught rubbing my turkey and tried to season my cavity with a carrot, but i found that it didn't explode in the oil because it was dry. Last time I did it a little wet and it just spurted everywhere.

Your info. is great! After much research; I just purchased a Butterball Electric Turkey Fryer fr. Ebay & we have used it twice & absolutely love it! I did a small Turkey 2 weeks ago & yesterday cooked a chicken & we are hooked! So easy to use. Clean up is much easier & the results are fantastic!! I will check your web page for recipes etc...Thanks so much!!

It can be so it is important to follow some safety rules. One big no-no which was pointed out to us by a friend is Peter should be using shoes and long pants! It certainly is worth it though! Thanks for watching!

Once you deep fry a turkey, it's the way you want to do it from then on. Moist & full of flavor. Plus, once your neighbors know you fry turkeys, your street cred goes way up!
I do so enjoy firing the fryer up and makin' a tasty bird!
