that pie looks awesome! although i have to dsagree on the pie crust. I always make my pie crusts with Lard, or Crisco Shortening. this makes the pie crust, light, flaky and delicious! I haven't never seen one made from oil. here in tennessee everyone uses a solid fat like lard for pie crusts.i do like the idea of using milk in the crust, i have never seen that! i always use water, like 8 tbsp the less liquid you use the lighter it is, and less dense. the more liquid you use it is heavy and hard.
Ben, I followed your directions and baked two pumpkins yesterday. I used one pumpkin for my pie and am freezing the rest of the puree. Can I tell you that your recipe for is TO DIE FOR! I will never make a pie again with canned pumpkin and condensed milk! Absolutely delicious! Thanks so much for sharing this recipe! :)
I'm only 3/4 of the way through and you seriously know what you are doing. None of the other recipes I've read talk about the use of the towel to get the water out, very smart of you to suggest it. Also, the use of the additional yolk. I can already tell this is exactly the type of fresh from scratch recipe I've been searching for. Thanks so much!!
Thanks for the tutorial! I am going to try it this year along with your pumpkin carrot cake. I also like to use the pumpkin puree with spices to mix with my steal cut oats in the morning.
