  • Aunty Titli has a good reminder to us all to stop burning the spices, by blending the dry powders with water into a thickish slurry. When they have been sauteed enough in the not-too-hot oil, the water would have evaporated and the oil will rise up, then you know your spices have "matured" and will be at the peak of their flavour. Blending them first with water also seems to make sure the flavours really amalgamate and harmonize well, a trick I learnt in Kerala!

  • And why do you say the Muslim greeting at the beginning? As much as they tried with the Hindu holocaust and all, there are still quite a few non-Muslims in India.

  • Those "chillies" you used...are they what we call in the US jalapeno peppers?

  • @Pteromandias No, they are more like thai red chillis. But jalapenos would do.

  • @grandcranium It was the strangest situation I've ever been in! Mind you, there can't be too many Chinese restaurants run by a couple of Punjabis!

  • Thanks! The only videos I don't put the halal mark on are those involving shellfish as there is some disagreement in Islam about whether they are halal, haram or makrooh.
