Aunty Titli has a good reminder to us all to stop burning the spices, by blending the dry powders with water into a thickish slurry. When they have been sauteed enough in the not-too-hot oil, the water would have evaporated and the oil will rise up, then you know your spices have "matured" and will be at the peak of their flavour. Blending them first with water also seems to make sure the flavours really amalgamate and harmonize well, a trick I learnt in Kerala!
And why do you say the Muslim greeting at the beginning? As much as they tried with the Hindu holocaust and all, there are still quite a few non-Muslims in India.

Thanks! The only videos I don't put the halal mark on are those involving shellfish as there is some disagreement in Islam about whether they are halal, haram or makrooh.
I guess there is only so much one can usefully say about vegetables :-) My step-daughter is vegetarian so I've learned what to use and what not to use. Enjoy!
Mmmmm.. looks good! In the last week, I have made aloo matar and chana masala with these same spices. My family loved it. Learning a lot. Please keep the videos coming. :D
