The best way to weave a pie that I've found is to lay out all the strips going one way, then lift alternating strips back half-way, lay down a cross piece, return the folded strips and lift their neighbors back half-way, and so on. When done with one side, do the same for the other. It's much faster and easier to weave the strips this way than the way shown in this video.

But the same principle is with puff pastry - there are good quality ones available in store. .but if i have the time and want to make something special: I do my own.

I had never seen the simple version before. I just made a traditional lattice pie last week. Some think that it must take a long time to do this. I managed several restaurants over the years and know how important presentation.
I did the second version of this to my apple pie and it turned out wonderful! I think the second (easier) version looks just as nice and takes far less time. Maybe the first would be okay for a special occasion, but otherwise I would recommend version 2.
