The vines coming out from the brandy doesnt symbolize anything but only to hint you that he is the woodsies lord. If you read in thief wiki, its brewed by the fruits you find in Constantines house when Garrett loses his eye. When eaten it heals alot of health points. Hence its restorative effects.
Agreed. I loved this scene. The music the dialogue, the voice acting. Sheer brilliance on Looking Glass Studios' part. I so miss this series and wish the Ken Levine would return to it.
Next to Garrett and Constantine's, Victoria's voice in the games seems a bit uninspired; you can almost feel that Terri Brosius is reading scripted lines into a microphone. And the way she says "appearan-ts"... ugh. But then, she was a designer, not a professional actor, so it's forgivable.
But please keep in mind, she is... well... pagan to the roots. In fact she stops Constantine from over-explaining things. The artificiality in her voice might be because of being an amateur voice actor, but suits fine at that point.

Utterly fantastic cut-scene, in one of -- indeed, probably THE best-sounding game of all time.
"Oh, but forgive me - you are, possibly, friendly with the order of the Hammer." No question mark.
Possibly the most exquisitely nuanced, ever-so-subtly /off/ delivery of a dialog ever. Sheer genius.
