The guy in the dorm room across from mine was playing this record (look up "record") and it was the first time I heard Joan Baez. I was a jazz fan (and musician to a very limited extent) and it sounded awfully simple. But beautiful. And I was mildly hooked.

This actually isn't a "Dylan song".  It's a traditional ballad, which Joan included on her 1961 JOAN BAEZ 2 album. She actually recorded it before Dylan did.
