Eric, you got trying all kind of new things, I picked up the jiffy corn bread mic and a can of cream corn tonight at the store.
I've also done roasted corn on the cob on the grill, the best corn I've ever tasted, only hate cleaning off the silk when the corn is hot. The first time I did this, I open up the lid of the grill and got a face full of steam, right then I knew it would be great.
Looks great! I remember I had tried two different recipes a while back. There was a standard recipe, and then the Mark Bittman recipe, and I liked Mark's better (with the sugar in it). This one looks good too, but would it be even more awesome with a bit of sugar added? Also, the best site about cast iron cookware is the one from "goodmorningamerica". Google "cast iron cookware" and it will be one of the first 5 links. I couldn't live without my cast iron pans.
to clean up before you season the skillet, make a bon fire in the backyard and toss your skillet in it. It will burn off all of the black goo, that is a old southern trick that my mother and grannie used to "freshen" up their cook pots.
I use bacon grease to coat the pan instead of butter; it gives it a smoky flavor. Also, if you get that bread out of the skillet as soon as it comes out of the oven, it won't be so burnt on the bottom... It's good stuff!
I've fixed that before, it's totally nom-worthy. Now do a video on corn fritters! Even better. And those are iron skillets where I come from, I've never heard them called 'pans'. =P
Quick note for you since you're fork person... My husband was leaving for work one morning, had his gun and black tactical vest on... I noticed something really shiny on his vest. He had a fork sticking up out of pocket on his vest!! He wasn't a boy scout, but apparently he's always prepared.

great cast iron find! I have loads of cast, but no pan that large, I want one! I get all mine cheap. Love the stuff for most cooking. That's no 8" pan lol, 10 at least but I think 12" #8 on the handle isn't inches. The cornbread looks great. Never thought or heard of putting creamed corn in it.
@erochow I know you knew better on the pan size lol, if you were just a dummy I wouldn't have ball busted ya on it ; ) I have a few pans with the same 8 mark. I literally have multiple piles of cast irons pots & pans. Whenever I see one cheap I buy it. But I don't have a huge one like yours and I WANT! lol
Hi Eric & family Good to see you . Unfortunately we dont have Jiffy or any other brand of Cornbread mix in Canada. Cornbread is not a staple here like it is in America.Yup, having it on hand to whip up some cornbread in a "jiffy" is great. & also added creamed corn ..sometimes canned or diced chili's too. @mukwah1111 I'm a transplanted Southerner now living in Canada. I make cornbread about once a week. In deed I have never seen a cornbread mix in Canada. Real cornbread is a mystery to most Canadians as they think it should be a sweet muffin with a cake like texture.
Try to find grits in Canada. I've never seen it here. I get my grits mailed up by friends in the States. It's a sad thing when I have to get my grits from New York City. :):):)
@macnutz Yup its a sad day when you have to get grits sent north but, in our defence...we dont eat no grits haha. Cant find corn tortillas here either & left my tortilla press in the prairies ! Looked for Louana's Coconut Oil at Walmart the other night ...no such thing...though I am seeing tons of American food brands in our Wallys...not a good thing. Corn muffins are Cdn...as you said...a sweet treat as with "biscuits" - ours are England-based sweet biscuits w/currants or raisins...never savory
@mukwah1111 Yes, after forty years I've noticed these things. :) coconut oil is easy to find but not at Wal Mart, try the ethnic groceries, especially Indian, Sri Lankan, and Thai.. But remember it is super high in cholesterol

@macnutz No ethnic stores in my neck of the igloo...Need it for homemade soap making & will likely end up getting it from a soapmaking supplier instead. Just thought good ol Wally World might carry the American Louana brand. Unfortunately they are wedging their way in all over the place here & people are accepting, adjusting & flocking like sheep.....Dangit !

People let bread cool down to let the structure set.
I like to use bacon fat for my corn bread, preferably Nueske's (a WI brand). The smokey flavor is great
People put in peppers - red bell peppers, jalepeno, poblono. Grated cheese is good too.
Really lots of ways to doctor corn bread.
