  • That looks a lot like the Italian Peasant bread I make (Pane Rustica). Could you send me the recipe so I may compare or let me know what book it came from.

    It's a standard Italian country bread recipe, so you probably already have it. Here are the ingredients: 1 1/2 ts active dry yeast 1/2 c warm water 7 c bread flour 1 tb salt 2 3/4 c cool water 1/4 c biga

    It's excellent bread.

  • @outworldarts This bread looks great, you stated 1/4 cup biga?, what is this ingredient? I want to make it tomorrow, how long does it cook? Temperature? and do you have water at the bottom to make it crusty? And thank you for sharing this.
