  • Hi Dede, lovely recipes! However am facing a problem. I dont have a oven to cook the sesame seeds to make tahini. How do I do it on a plain old stove?

  • @hiraj15979 just toast them in a pan, no need to add anything, toast them until they are light brown.

  • @njprakkat you can use a light olive oil b/c you don't want the taste of the olive oil to interfere with the taste of the sesame seeds.

  • @aleica you can eat it with falafel, chicken, shawarma, kefta, fish, this really goes well with anything.

  • @dedemed thanks for the reply. Tahini can only be prepared from roasted sesame, right? and also, can I used tahini sauce from your recipe as a dipping sauce for sliced lamb meat barbecue?

  • @aleica Yes tahini is made from toasted sesame seeds. And yes tahini sauce goes great with lamb, chicken, falafel, beef and even fish :)

  • @fabfauna that sauce is good for about a week or so but the tahini jar is good for a few months, just keep it sealed.

  • @cphunt I personally don't add any olive oil b/c the sesame paste has enough natural oil in it. There are many different recipes for this and I would say they are all authentic, just made the way each person likes it :)

  • For some reason, this tasted really bitter to me. I added a bit of olive oil and it helped a bit. How can I get rid of this bitterness?

  • @redrubymist just add a little more lemon juice and some water, that will do the trick :)

  • We were making falafel sandwiches yesterdday (we know have it atleast once a week, usually more) and iwhen me make them we put chips in them (as in fries) and i randomly decided to dip in tahini and it tasted great! we finished off most off most ofthe chips like that

  • @598sapphire895 very good idea, you can even add some mayonnaise to the tahini sauce and it makes it thicker for a dipping sauce for the fries.

  • a week ago and a bit ago, we made it with homemade tahini (from ur videos) and today we're making it from shop bought tahini paste; lets see if theres a difference!

    I will try to make the Tahini sauce today. Can I put water to the sesame seeds while grinding or does it have to be only oil?

  • @sinsha1974 it has to be only oil. THen after you make the tahini paste, use what you need to make the tahini sauce. Check out the written recipes on my site :)

  • i get raw sesame seeds mail order and make a completely raw tahini that is not bad. toasting the sesame probably brings out more flavor but I'd like to recommend trying it raw for even better health

  • I'm afraid even sesame seeds are too expensive at my local store to make it from scratch. 16 oz of sesame seeds costs $6.99 so I'm going to start purchasing it on amazon though.

  • I think the kind I had tonight was yogurt-based, but I'm not 100% sure. It was delicious on the lamb, and even the pine nut, rice and cinnamon mixture I had.

  • I would suggest lightly toasting sesame seeds and then grinding them in a good food processor. Then strain it so it is smooth, this should work to make you tahini paste.

    That is quick recipe, I have a question. I found garlic paste too when I was looking for tahini paste. Do you suggest fresh garlic over garlic paste to mix in tahini paste?

  • I do suggest fresh garlic b/c it is always better to use fresh ingredients :)

  • I would suggest lightly searing the fish first then bake with the tahini sauce for 15-20 minutes at 400 degrees and top with sauteed onions :)

  • Hi dede, I always thought the white colour came from yogurt. I now know many recipes don't call for it either. How does yogurt, or lack thereof, play on the taste?

  • Greek or Mediterranean yogurt has a nice lemony flavor and it helps to smooth out the flavor of the ingredients, it is an amazing touch to making hummus :)

  • Yeah that's truth. Here in Sweden in my town, it's very expensive to buy falafel out I think.... It's like 7 -9 dollars perhaps. :/ depends on how much the dollar is worth in our value. For fastfood, that hurts in the wallet hehe :P

  • The oil in tahini sauce is from the sesame seeds themselves, they give off this oil when ground up :)

  • All you need is toasted sesame seeds and then blend them in a really good blender, then run them through a stainer.

  • tahini with yogurt is used for different recipes life fatteh and kefta with tahini sauce.

  • Dede, do you find it necessary to refrigerate tahini, or would you just add hot water to the cold tahini to thin it out?

  • No, you don't need to refrigerate tahini, just make sure it is sealed well. IF you refrigerate it then it will become too firm and stiff. Do not add water to that tahini jar but you can add it to the tahini in the bowl. :)
