Hmmmm~ Sir, flour po yung gamit ninyo as thickening agent pero dapat tinunaw nyo po muna sa cold water diba? magkakaroon po kasi ng "lumps" yung sauce ninyo kapag bimuhos ninyo directly sa simmering or boiling liquid ang flour. Para mas smooth yung sauce dapat tunawin muna yung flour sa kahit anong liquid basta dapat maligamgam or room temperature lang but I think it is better to use Slurry to thicken palabok sauce than White Wash. :)

@KiHyo888 What Panlasang Pinoy did is right. You can't possibly dissolve the flour is a small quantity of water otherwise it will turns into a dough unless you use a large quantity of water but it will upset the sauce mixture. Flour is mainly used for white wash type of texture. If you want "malapot" or slurry texture then use 1 to 2 tsp of cornflour and dissolve it in same proportion of water. The other way to dissolve flour is to sift it while constantly stirring the mixture to avoid lumps. :)
@ozkabayan In "PROFESSIONAL KITCHEN" We always dissolve starches or powdery ingredients with cold water or with fat or oil, then add this slurry to the hot sauce. NEVER MIX DRY FLOUR OR STARCH WITH A HOT SAUCE.

@annq8 Saffron has a distinct and powerful taste. If annato is not available you can use Shrimp skin/shell to add color to your sauce. Saute the shrimp shells including head in oil then deglaze it with stock.
I have come to the conclusion that Philippine food is not healthy (actually it is very unhealthy - high in fat/cholesterol, salt and sugar). Japanese food (sashimi & sushi) is much healthier,has a more nuanced flavor, & much better for you.

japanese cooking is great and healthier but it is also very expensive. not a lot of people could afford it.

that depends upon how much anatto powder is being used in the sauce. lesser anatto would result in yellowish to pale orange color and generous amount would result to orange like color.

@marleykiel WHITEWASH- Is a thin mixture of flour and cold water. For SAUCIERS~ Whitewash is the last option to thicken a sauce.
WHITEWASH is NOT RECOMMENDED for use.

Anato powder is what we all know ATSUETE. If you're worried about NOT HEALTHY, then this dish is not for you.

@annq8 Saffron has a distinct and powerful taste. If annato is not available you can use Shrimp skin/shell to add color to your sauce. Saute the shrimp shells including head in oil then deglaze it with stock.

I have come to the conclusion that Philippine food is not healthy (actually it is very unhealthy - high in fat/cholesterol, salt and sugar). Japanese food (sashimi & sushi) is much healthier,has a more nuanced flavor, & much better for you.

@HinggilSaTinggil it is true that filipino cooking is very unhealthy. but there is a way to make it healthier like using olive oil in our frying and more fish and poultry in place of pork and beef. also, cook more vegetables like batchoy, pakbet, boiled okra, boiled ampalaya leaves, dinengdeng etc. like the farmers in the philippines eat.
japanese cooking is great and healthier but it is also very expensive. not a lot of people could afford it.

that depends upon how much anatto powder is being used in the sauce. lesser anatto would result in yellowish to pale orange color and generous amount would result to orange like color.

Thanks..Good for single serving,for group serving, I sauted garlic,add pork,shrimps,oysters,adobong pusit,chicaron,tokwa,powdered tinapa,achiote,scallions,starch diluted in water, all together in my sauce, mixed it with my noodles, put in big oval plate-then I add all my topping,adobong pusit,chicharon,fired garlic,chopped scallion,eggs,cut lemon....walaaah !
