Instead of going thru that rediculous "heat the bowl with the water" mimic net time try keeping the pancetta/bacon pan warm and once you wrinse the pasta put it into the pan, give it a nice stir, turn OFF the fire and poor in the egg, parmigiano and pecorino mix.
Hey, try this dish out with Guanciale instead of bacon, half parmesan half pecorino.
You dont need cream, you just have to temper the eggs, pour a little of the hot pasta water in the eggs and whisk it through, do this 3 times, then add the pasta to the guanciale, along with some pasta water and loads of pepper, let it reduce a bit and add eggs, when combined, add the cheese. then serve!
You're very brave doing a carbonara video - if there's one recipe that draws out the culinary snobs and know-it-alls, it's Cabonara! I enjoyed the video!

Other than using bacon (instead of pancetta or guanciale), the steps in this video follow how spaghetti alla carbonara is made in Italy.
My only suggestion would be to use a mixture (1/2 cup each) of pecorino romano and Parmigiano-reggiano cheese and top the dish off with chopped Italian parsley (the flat-leaf variety).
Cream is never used in Italy for this dish -- only a spoonful or two of hot pasta water, if need be.
O.o basically you are using the wrong cheese (u need an italian one called "pecorino" or at least "grana padano") and too much beacon (u don't have to fry the beacon, just cook it few minutes on a low flame :s)...
in the end u have to put before the pasta and beacon together and mix them nicely, AFTER that the cheese+egg (the result of eggs and cheese mixture have to be like a liquid cream, not a solid block like the one u did :s!)

The Italian comments are not positive at all as you are using BACON and that's a big mistake. The Carbonara comes from Italy and Italian cooks only use GUANCIALE never BACON. Then you have to use ONLY olive oil, Parmesan and Pecorino cheese.

Actually there is a traditional recipe, which is very simple, but the ingredients are hard to find even in Italy: Guanciale (which looks like pancetta but it's not) and Pecorino dei Monti Sibillini can be found only around Rome. I think you guys did a good job. The Carbonara looks yummy I'm going to make it in one or two hour. Hey just because some of you guys are Italian or from Italy. Just keep the egg, pepper, and pecorino and parmesan in the mix, adding generous ladles of cooking starch from the pasta pot, and you should be good to go!!!

Btw nice idea of keeping the bowl warm by pouring the water in, But a slightly better way is to pour the spaghetti back into the greased pan and add yor egg mixture + a bit of pasta water! Also try using some pecorino, pecorino adds some depth while parmesan adds the flavour! Good video :D

that was alot of noodles i would have used 3 egg whites and one whole egg for that.
also more cheese would be good for it also since its alot of noodles.
and gratting the cheese helps but that dont matter as long as it melts.

Well done mate. Nice to see a straight forward, honest approach, using what's available locally. That's what cooking is all about. Happy, hungry dogs too. By the way, for the dissers on this comments page- the worst italian food I've ever eaten was in Italy and I lived there for 24 years.

Good job Eric. I am from Venice, Italy. Just don't worry about all those comments. Even here in Italy we cook it in many different ways. Actually there is a traditional recipe, which is very simple, but the ingredients are hard to find even in Italy: Guanciale (which looks like pancetta but it's not) and Pecorino dei Monti Sibillini can be found only around Rome. So don't mind about all those 'professionals' and just keep cocking your way!

I think you guys did a good job. The Carbonara looks yummy I'm going to make it in one or two hour. Hey just because some of you guys are Italian or from Italy. It doesn't been that you know how a perfect Carbonara should be served. All American knows how to eat a burger. But, it doesn't makes them expert on how to make one.

when the pasta is done pour it in the pot with the bacon for half minute, then mix it all with the eggs for another half minute, add a little of water from the pasta.
grate parmiggiano smaller than you did.
1 whole eggs each person.

Ok, the Italian is here to comment and lambast you. Love the dogs!! When in Rome, eat as the Romans do. I have made this recipe with every version of Pancetta, Guanciale, Bacon, Ham, Mortadella, Prosciutto, Salami, Pepperoni, whatever cured dried meat you have lying about. AND, any form of pasta you have to scrape up from the cupboard. Just keep the egg, pepper, and pecorino and parmesan in the mix, adding generous ladles of cooking starch from the pasta pot, and you should be good to go!!!

I just love the dogs! So adorable!
Btw nice idea of keeping the bowl warm by pouring the water in, But a slightly better way is to pour the spaghetti back into the greased pan and add yor egg mixture + a bit of pasta water! Also try using some pecorino, pecorino adds some depth while parmesan adds the flavour! Good video :D

Killer, If it makes you feel any better I throw a handful of fresh Italian parsley and a huge handful of arugula in mine...and at least get a little green in there. You cant eat this every day, but it sure is good.
