answer to question:D : when we did it off a jetty we tied a (very long) rope to the bike then half wrapped it round our hand so u cud let it go and it would still sink but you can pull it back up at the end

Another way is wrap 1/3 pumped up innertubes around the spokes( if done carefully you can ride it fine) and then it floats :]
