Man, you've got some old school experience!!! I just finished watching the brisket (my favorite cut of meat) and it looks awesome. I never marinaded before. I think that's what I was missing because other brisket I've had (much better than mine) was marinaded too. Anyway, ribs look great, a little dryer than I'd prefer but I don't really know cause I can't taste 'em! Keep it up. Thanks for making these videos and keeping southern BBQ alive!
I like your production and I'm sure it'll get even better with a new camera. I noticed you didn't use a water pan on these slabs. Please tell me what points do you consider when you decide on going with/without the water pan? Thanks again and I like the vids.
Thanks. I used to use a water pan all the time but recently I started using ceramic plates as a thermal mass between the fire and the meat. So now all I do is put a foil pan made fron hd aliuminum foil to catch any grease.
The water pan will help you to stablize the grill and make it easier to control it when when using just the vents.
I use a BBQ GURU, see my video, to control my grills during long cooks so that isnt an issue for me.
