I just did that video for fun. The long version is almost an hour long. Too long for YouTube. It really is simple to do. I used another video on YouTube to learn the first time.
I think what you are seeing is when I named the new drive in disk utilities. Once the drive is installed, boot from the install DVD. The first thing you want to do is format the new disk with Disk Utilities. Then you can install a clean OS, or simply restore everything from a Time Machine backup. TM will install everything as it was on the old drive.
