Sure you can use roasted almonds. The important thing is to enjoy what you are making. Raw almonds simply have natural enzymes that roasted almonds will not have. Your body uses its own enzymes to digest foods whose enzymes have been depleted during the cooking, roasting, heating process....so when you eat foods that have their own enzymes in tact you give your body a break. Enjoy!
Chopping the broccoli is an awesome idea, I will try that. Although I will omit the date sugar, I want to keep this as simple as possible. Can you use roasted almond instead of soaking them?

This actually sounds good.
Our broccoli is start to head so we will be picking it possibly by the end of next week.
