I think Excoffier got the short end of the stick, largely because the judges were amongst the least erudite I have ever seen on ICA, with the exception of Knowlton...Ruhlman was dense and obnoxious, Wolfe has no business ever appearing as a judge, but would do well in a Big Mac vs. Whopper cookoff...I do like Flay, but can't believe he won this! LOl he always seems to get huge points on taste, which I guess is what does matter the most....

Not a problem mchan, I'm liking the new videos.

Although I personally would be hesitant to be a judge on this show when they have secret ingredients with little to no flavor at all like Dorade or Octopus. Having tried both, they seem to just soak up whatever spices, sauces, etc, you put on them and thus to me it's just those spices you taste rather than the main ingredient outside of texture. They could tell me it is Dorade or Octopus and I could never tell unless they told me.
