The more gold you pay her at once the less chance you have of getting it back without being detected. So if you pay 4 times and she has 1200 it will be 0% chance of pickpocketing without being detected, however if you pay her once then there is more of a chance that you could steal your gold back without being detected.

The only reason it says you can't pick pocket your gold back is because you don't have the 2nd perk I think in the tree yet. It allows for items that weigh less be more able to pickpocket.

@skillagelfc98 After a while, it becomes impractical to buy levels then steal it back. After around 50, the better option is to give her about 600-700 gold, save, then thieve it back (gives about 1.5 levels per successful pickpocket). As you level up, you can start putting in about 900-1000 gold for faster leveling, but it'll take more attempts so always save before pickpocketing and before giving her the money (yes, that can fail too).

She ultimately sends people to kill you, note its much easier to level to 4 trainings per level then go outside and sneak attack your horse til you ramp up to the next level again.

why do people keep claiming that pickpocketing trainers has been patched? it hasn't! the reason why it probably says 0% of pickpocketing a trainer is because you're probably in a high level right now (for me i'm in level 45)! even though my pickpocketing level is already at 100 i STILL have wear armor pieces to increase my pickpocketing chances! it's dumb but oh well...
