For me, Splashdown 2, Karate Man 2, and Moai Doo-Wop 2 are easier than the first ones (although both Moai Doo-Wops are hard as heck).

Grip the stylus firmly, bend your wrist back, and hold the stylus close to the screen. Use quick, twitch-like light flicks of your wrist for the double-taps. Don't worry about holding the DS so you can see the left screen clearly, angle it however is most convenient to allow you to hit the screen.

It also works best if you can comfortably support your stylus-wielding arm against something, say by sitting cross-legged and resting your elbow on a leg -- or just dig it into your gut if need be.
