I'm italian and I can assure you using "tomato paste" is not considered "High cooking" at all. No tomato paste can substitute the traditional "sugo", expecially when doing "Ragù bolognese". But I think he used that tomato paste just to simplify the TV process... Also, pasta "De Cecco" in Italy is considered highly superior to Barilla one. At least for those who are really expert in pasta. I guess he advices "Barilla" because Mario is one of their partners.
At 7:19 rachael ruins the whole italian language by saying the "New Yawk" version "Manicot". She leaves out the vowell at the end. I cant stand when wanna be italians who werent born in italy do this. They not only ruin the language and the romanticism of it, but they actually believe the dirty slang they speak is right.
