if you DI right, it doesn't matter. You can air dodge and hit the ground where there's no lag and your shield comes up instantly or you can roll. There are no COMBOS just MINDGAMES. Air dodge is imba in this game, the vulnerablility you're hoping for does not exist.

actually tapion on some of those uair -> knees, the opponent was still in the hitstun from the uair, meaning they couldn't have airdodged out of it. they still could've DI'd out of it most likely, but as people have said there's not very many inescapable combos in brawl, so even inescapable ones are sweet

you can air dodge anytime after you're hit, even instantaneously, there really isn't any hitstun at all anymore, all they left behind was hit knock back which is unchangeable, although you can still airdodge, then jump, and do moves, but still end up dying anyway. I would've been really impressed with a knee after an airdodge, but to me it just looked like he was so used to melee he just didn't bother... either that or he was reallllly bad... maybe both?
