I took this to be a self-reference to their own work. In Raising Arizona the 'Biker of the Apocalypse' (an incarnation of evil a la Chigurh) shoots at wildlife.. I think it's a rabbit, while driving past it.

He doesn't shoot the bird, he shoots the aluminum bridge rail/post the bird is sitting on, and it flies away unharmed.
