it doesnt matter what you do to the fish if its brain has suffered catastrophic failure from acute brain damage. the heart as tissues can be kept fresh for a few minutes as long as you pass oxygenated through their gills. sometimes you see moving sushi, if the fish was subdued correctly, its just an issue of how fast it got from the butcher to your plate, so letting it retain its blood and noncerebral processes 'vegetable'. im sure the blood pressure displayed was to insure brain herniation.
