Yes, I had the same problem - they are very delicate!! I don't think you did anything wrong. The only suggestion is to make sure the dough is nice and compact when forming the logs, using a serrated knife, being gentle when sawing...maybe a tad longer cooling time before slicing. As I said in my blog post with this recipe: the crumbs are delicious!!
I made these yesterday they were so good and easy to do and tasted great! I had to put the rest in the freezer to save for a later date. I did leave just a few out to have for now. Great recipe! Thanks for sharing~
Hi Angie: Have you ever made divinity? If so what on earth is the trick? I tried several times to get it mixed and it just bogged down my Kitchen Aid. I would think if any machine could handle this candy, the KA would. ANy tips or tricks?

I just tried Betty Crocker's, I can send you that one. But I also tried one from the Internet, I'll see if I can find that one again! Divinity is similar to making marshmallow, a lot of powdered sugar and syrup.
I have a few questions before I begin. Is a paddle attachment for the mixer necessary? I don't have one. Does it make a big difference in the way the recipe turns out? Also, how do you soften the raisins? My mom enjoys biscotti very much and will buy it when she can. I would love to be able to make it for her so that she doesn't have to buy it. No, you can just use a regular mixer...or even by hand, but it will be more work to stir the dough...you don't need the paddle. I just soften the raisins by pouring boiling water over to cover...let sit a few minutes and then drain. We are all great, thank you! I'm sure your mum would LOVE this...I gave some away and they were enjoyed. (See tomorrow's blog post for pretty packaging idea!!). Thanks, Lois.

I'm a tea drinker, not a coffee drinker so I rarely make biscotti...is the parchment necessary? I never have that in the house...
