Wine glasses are sometimes held by the bowl briefly, if it is chilled too much, so that it may allow the aroma and flavor to be better identified. Your right about them talking with their mouth full though....
That's why you should serve the wine slightly chilled "NOT COLD" (that is whites about 55-57 degrees while reds should be served at around 68 degrees. You are right about the aromatics.
