I'd imagine it has the same flavor as many organ meats? If this is so, perhaps barbeque might not have been the best cooking method. I'd suggest breading and pan-frying with bacon, onions, mushrooms and a splash of red wine to deglaze. High sear, then lower the heat to cook thoroughly.
