Gloucester is one of my favourite cathedrals, with Bath Abbey. I used to worship at Winchester when in residence there and it's also on of my favourites.
My mother was organist & I did spend a great deal of my youth in the organ loft. This gavotte sounds familiar to me which gives me the clue that she might have played it. I was later a chorister myself, and went to the cathedral choir school from grade 3 to 6.
Did you take all the pictures and made the video yourself?

Who is the composer, what are the pieces? Especially the 2nd piece. Could it be Wesley as the plaque at the end implies?

Yes, it's the Air and Gavotte by Samuel Wesley who was the organist at Gloucester Cathedral.
