  • @mroven1234 That's called medium-rare... and it's what I was going for. Another 30-seconds to a minute on each side will get you to medium. -Kirk

  • @NikkitaBombom Your use of "then" is superfluous at best. Also, "I" should be capitalized and "9 minute" should be hyphenated. "Long" is simply redundant, as anyone would assume that a 9-minute video would be 9-minutes long. Furthermore, the phrasing of your sentence indicates the entire video consisted of me reading letters. It seems you have plenty of time to make dinner and watch a 9-minute video. Your bigger challenge will be making time for grammar.

  • Great video. Skillet burgers are soo much better than grilled, unless you do them just right on the grill (which is harder than you'd think).

  • @AnglarnaGoteborg Between you and I, here's the deal: As long as your cooking those burgers within the next hour or so it's perfectly fine to keep them in a cool place, covered. The reason I said I was putting them in the fridge is because people have a tendency to freak out when they don't see you take every precautionary step in a video. So, there ya go.   • @dncdragon That was the goal. A burger is at it's best when it's cooked to medium-rare/medium. That said, if you like your burger done well, cook it for another minute or so on each side. -Kirk

  • i read before that you're not supposed to salt the meat only after you form the patties because this breaks the meat and the is exactly what happens. I really liked the fried chicken video and your videos in general, keep em coming!

  • @mm186 I've heard the same thing myself, but personally I think it's a little overdone. I wouldn't salt the meat HOURS in advance of cooking it, but I've never had a problem when I've slated the meat, formed them into patties, and cooked them within an hour. Thanks. -Kirk

  • Lots of reasons. The short list... it has better flavor than iodized salt, it's less "salty" tasting, the larger grains make it easier to handle, and it's inexpensive.

  • You got me. I've been a fry cook at white castle for 3 months, but my boss says I show real promise and he hopes to promote me to the grill. Once that happens I plan on making those burgers a little bigger and changing the WC business model forever. That would be epic.

  • jhooty, It's kinda hard to answer that question in 500 characters. It's almost like asking if it's safe to cross the street? Yes, but there are always freak occurrences, right? In terms of eating ground beef medium rare, your chances of safety dramatically improve when you use meat that's been ground fresh. If you shoot me your email addy I can answer the question more completely. For now, if your nervous about it, simply cook your burgers to medium.

  • Bradlee, almost anything will work - canola, vegetable, peanut oil are all fine. I also like using clarified butter. Hope that helps.

    Thanks for the tip on not packing the burgers down when you shape them. That's what I normally do and the patties do come out tough.

    Also, the bacon drippings tip is a good idea too. I normally cooks some bacon for the burgers anyway.
