Im going to make this for my school practical ! A few questions: What gas mark did you cook the meetballs at? Do you have to put them in the fridge? Could i cook the sauce for just half and hour and the taste would be the same?
It's better to put in fridge as they are less likely to break up when cooking.
You could cook the sauce for less time maybe 30 mins and it will tatse good. However, you will often find that the longer you cook a sauce the better the overall flavour. You may need to add some water if you were cooking for longer or wanted a thinner sauce.

You can add herbs into the sauce if you want, your choice!. The cherizo does give it a distinct and delicious flavour and worth adding if you can get hold of it :)
I really have to commend you on your ingredient choice. So many new cooks get turned off the idea by the sheer number of ingredients some recipes require, and are often daunted by the idea of getting access to certain things. The pork sausage thing in particular is fantastic. Old fashioned meatballs taste fantastic with pork in but people assume you need pork mince. This isn't sold in most shops (even my butcher only does it on order), but sausage meat (aka skinless sausages) works just as well.

I really like your recipes. But I have 2 suggestions.
1: if you add the tomato purée first en bake it for a while your sauce will get less bitter so maybe you don't have to add sugar ( at least in my case it wasn't necessary but of course its your personal taste
2: When I made this dish a add some fresh basil and that was really nice!
That sounds like a great tip. I think I also have al slight sweet tooth and like the sauce very slihtly sweet. Also I think the cans of tomatoes I use are not the sweetest tomatoes, The basils a nice touch too.

You can leave out the chorizo in the sauce if you want, its mainly there to give it a nice flavour.
I would recommend to keep the meat in the meatballs though :)

In my other meatballs video I did fry the meatballs. Thats how I usually do it.
Someone once asked me if you could bake them instead of frying so I decided to include that in this version.
They are still tasty when baked :) Especially with a nice tasting sauce.
