Back then people were much more relaxed about vegan/vegetarian and the lines were fuzzy for most of us and the majority did not know what vegan was. His recipe is vegetarian, but not vegan. I choose the ladder.

@supersomebody101 I heard Bocca has agreed to remove all eggs from their vegetarian products, I'm not sure if they have done so yet. I don't know about the milk. Never had any fish. Basically making your own from scratch is much better. You can make them ahead, freeze them etc. Its a LOT cheaper too. There's hundreds of recipes on my page from lots of people, maybe some of them might help. I've used lentils, beans, wheat gluten. Check out "Vegan Dad" Blog & "Every Day Dish" on You Tube.
