The problem with this type of idea is that..well "organic" and local food can be expensive and its a lot cheaper for the average family to simply get burgers than fresh produce from a local farmer.
It is better to use the Poke Pole to catch the Crab. Once the crab latches onto the bait he won't let go. The Crab is a Red Rock Crab all the meat will be in the claws. You take only one claw and through it back. The crab will grow a new one.
