The START of the game is set 7 years before FF7 game. After Angeal dies, 2 years pass and they show Zack talking to new SOLDIER recruits - Cloud's flashback of Zack saying "so you wanna be in SOLDIER". The part where he and Seph go to Nibleheim is 5 years before and then the end of CC is just before FF7 game starts.

Actually, I think only Sephiroth's bangs are shorter. But Zack's hair definitely grows.

If you watch the first cinematic scene and then watch the last battle cinematic scene, you can really see a drastic change in Zack's appearance.
