I would recommend Screenflow. I use it all the time, its a great program, very self explanatory.

It does cost, but hey, with all the torrents around these days, you wouldn't have to pay a penny. Not that I endorse torrent using, but still.

for a long time a try some Video capturing programms out and finaly I got screenflick because the result was the best. Sorry, it cost money and I don't have any experience if it works with your stepmania. But try an trial version.
