@MrBwmorrow That's not always true, in a mod(Sword of Damoncles) there is a horse health bar.

numbers don't count if you use awsome strategy :

letting your enemies fire first from a long range (the chances are that they will miss) will your soldiers are holding fire so when the enemie is closer you allow your soldiers to fire at will killing everione at the same time. but in this case you won because you were better equipped

Well it is really possible to beat 125 unarmed mobs against a trained soldier and one more thing mount and blade have a balancing system which only allow few unit to spawn in an specific time to avoid lags.

You were fighting peasants and had guns. I think perhaps the numbers count when your enemy is even remotely as well equipped as you.
