Brunost literally means "Brown cheese" although it is not really a cheese. It was invented by a milkmaid, Anne Hov, in the late 1800's to make better use of the whey, which previously only had been fed to the calfs. Geitost means "Goat Cheese", and contains or is made in full of goat whey.. If you dont boil out all the water but stops when it has a creamy consistence, you get what we call "Prim" or "Møsbrøm".
