yup, I have done this myself probably 50 times or more in Afghanistan with sealed water bottles. Originally I thought it was due to the climate there, however I found it is caused because the water is pure and can get to sub freezing temperatures without the crystals sort of finding a nucleation site, or a beginning of the crystalline formation. With the movement of the water bottle it can grab onto small air particles suddenly mixed in and starts to form. So the theory has it.
It's easy to do but just as easy to miss. The water is cooled to the point where it is at or just below freezing, but since it is not disturbed it has not crystalized. Once disturbed, it crystalizes or freezes almost instantly. That's just my guess. I'm sure someone has a more intelligent answer.

Put a bottle of water in the freezer for about an hour and a half take it out , bang on counter and boom it freezes. Very cool for young kids.
