Some people like to argue about someone's recipe posted at Our Beloved Father YOUTUBE, without experiencing it by following the recipe. That's wrong. What I'm going to do is to try it shortly. Bearing that in mind, your recipe calls for a total of 2 ice baths after cooking with boiling water - won't the final ice bath become less effective/ineffective with this hot-cold-hot-cold change? It seems like your recipe is using the ice bath method pimarily as a way of temperature control?
2) Why have the repetitive cycle of (after 5mins cooking) put chicken in ice water then cook at least 20 mins then back again in ice water ?
- The "Ice bath" method is recognized as a step to "shock" the chicken with immediate contact to opposite (freezing) temperature. This stops the meat from further "self-cooking" and to shrink the skin and meat so the chicken is bouncy and not soggy.
@pfssst You got it in one, this is why you do it twice...In fact the only different between HN Chicken and Chinese Chicken; are the sauce, rice, longer cooking time, and the way you slice the chicken (smaller pieces with no bone).
@pfssst The reason why you soak the rice is that, you have to fried it raw. Some people do not fry it at all, they just use the chicken soup to cook it. For get about the Fibre, it is not healthy anyway..

Thanks mate! In fact Hainan Chicken rice is similar to Plain Boil Chicken... But this is what I learnt from a top Hainan Chicken Chef, and he said, " The secret in HN Chicken is just the rice, the sauce and the way you cut the chicken" And you can always over cook a HN Chicken, but must wash it in cold water every time you boil it. Water temperature control is important tho....Most of the video I saw on youtube, is just boiling the chicken....haha

like cook for 20 min and soak in the ice bath than cook again coz this way to improve the tixter of the chicken
cook very well and very juicy and not dry

Hi there, nice video. I've got some questions about your recipe:
1) Why soak the rice for 1 hour?
- Wouldn't this make the rice too soft and drain the healthy roughage (fibre) away?
- The next step is to fry the rice so you need completely dry rice. Or do you think frying the raw rice with a little bit of moisture is ok?
