vacuum cooking is a low temp cooking method....u vacuum the food then slowly pounch it...known as suvum.

"Sous-vide" is French for "under vacuum."
If you're not careful, you can develop botulism because the food is not cooked to a high enough temperature to kill germs.

Yea, there was. They even had a 3 min video about how SPECIAL the tofu was. How it used some kind of unique water.

I am sure there was more than one tofu battle, over the years. I used to watch Iron Chef on a local (non-cable) channel in the US, with subtitles. I am sure some never got "dubbed" in English.

I was just saying it was cool to see an episode that was during the Nakamura-era. Yes, I realize he was not in the actual battle.
Sorry, I misunderstood. archo89 has posted quite a few early battles. I would love to see Sakai's first, when he took over for Ichinabe.
