Thanks so much! I've used the recipe from Wild Fermentation by Sandor Katz, which is very similar. There is a surprising dearth of info on wild yeast soda making on the net.
Some notes:
1. Yes, guy. Please back off. The questioning method is a nice touch, but you undermine her authority.
2. I used honey for the simmer stage and it came out great. It did NOT take one month. After two weeks, I had TONS of fizz.
Katz instructs to bottle right after adding the starter. I'll try yours.

Instead of sticking a knife into the jar to prevent thermal shock... just fill it up partially with cold water then pour the hot water into the cold water.
can you use a pre made soda like club soda or tonic water?
