How odd, I had beef and fava beans for lunch yesterday, cooked by an amazing moroccan lady-chef that owns a traiteur just a few meters away from my office. She had it cooked quite differently though, without tomato sauce and paprika, and she added artichokes as well. There was lemon in it for sure. Do you know the recipe? This lady unfortunately doesn't speak italian very well...
@MiKMadeinKitchen it will be the same steps...with the same ingredients...but without tomatoes and paprika...you will need onion,garlic, pepper,ginger,turmeric,salt, they are basicly the same spices we use every time for a tagine...and then add the vegetable you like after the meat is done because they dont need too much time to cook...add the lemon (preserved) in the same time you you add vegetables...you can try to add some olive oil at the last step..it gives that rich taste to the tagine
