  • I'm 75 years old and I just now realize I wasted my life.

  • This video needs to be amended a bit. I see absolutely no reason for the extra fat being added to it at the end. That is by no means proper. You could also cook a pasta slightly less than al dente, and let it finish cooking a bit in the sauce, but that's just preference.

  • Get fucked, I like how I make my pasta.

  • needs a little consomme, of the dorito variety.

  • this seems dumb, and like, thanks dude for teaching me how to add sauce, but... the truth is we're all watching this right now, like..actually. the fact that we're watching it in the first place doesnt put us any higher than that guy at the moment :P

  • you should just mix it on the plate, because if you want leftovers you can't package it like that. it'll get disgusting, you should package the sauce and pasta seperately

  • Fuck you i'll put my sauce on how I like -_-

  • How is a flavour "shiny"?

  • @6G08FTDM Butter

  • It doesn't have to be perfect, it's just food. It's gonna digest and look like crap when it comes out anyways. Well it WILL BE crap.

  • I guess I do it right

  • TORIBASH MUSICCCC!

  • And this is how my mother HATES her pasta. She won't eat it if it's like this since she likes sauce in moderation and not dominating the flavor from the pasta.

  • Comment removed

  • @EeveelutionStorm Your mom is wrong, and should be put out to pasture. There is only ONE WAY TO EAT PASTA AND YOU ARE LOOKING AT IT, BUDDY.

  • @AveragePope ...EXCUSE ME!? BULLSHIT! Guess what these morons and you are wrong and do NOT insult my mom! We all have different tastes! My mom prefers it with the sauce on top not mixed! It's gross and I agree with her!

  • @EeveelutionStorm You better eat your pasta this way, or else. I'm warning you right now. I'm not the one you want to test when it comes to pasta eating. I was the leesburg county pasta eating champion three years running back in the 80's, so I KNOW WHAT I'M TALKING ABOUT, buster.

  • @AveragePope That's sister to you and no thanks I prefer eating my pasta the way I like it. I used to eat it this way...But then I took an arrow to the knee.

  • looks like my dogs vommit

  • Me: I watch!

    Parent: I do it right!

    Me: Cool!

Parent: OK! I have to work!

  • like if u like the wrong way

  • Bitch give me that wrong pasta it looks good.

  • What would you want to say italian words without even knowing how to spell them.. it's MANTECARE not MANTICARE, coglione!

  • CHOW is just full of condescending douchebags

    fuck you man

  • @10Dante4

Be nice to the man on the internet telling you what to do.

  • Does that empower you to say others are doing something wrong? What is this, the old time honored cooking tip or tradition from 400 years ago? If they want a good audience YOU'RE DOING IT ALL WRONG !!!

  • i'm italian and i can said it loud...YOU'RE DOING IT ALL WRONG!!!

  • if your cooking your pasta for too long until its flabby your doing it wrong. pasta is supposed to be al dente

  • @MagicallyFat if you're writing your instead of you're then YOU'RE DOING IT ALL WRONG!!

  • @guguigugu calm down there, sally. its youtube not my next term paper. i know the difference between your and you're

  • The first "You're doing it wrong" video I actually agree too.

  • It all goes to the same damn place why does it matter...

  • @humdrumpotatoskin by that logic you could just blend it all and drink it on the go

  • @humdrumpotatoskin IT TASTES BETTER THIS WAY YOU NON CORRECT PASTA MAKIN CHUMP

  • these top rated comments on these CHOW videos are so funny

  • If you put butter and olive oil on that pasta and sauce, you're doing it all wrong......ps:i'm italian

  • This is almost the way we do it in my family but we only half-cook the pasta then we add butter, herbs, pepper, salt, fried garlic (and anything else we like) to the sauce and cook it on low heat for a few minutes before we add the warm (well drained) pasta to the mixture, and then we cook it on low heat for 4-5 minutes so that the pasta is fully cooked and suck in some of the juice. It is delicious and pasta does not taste like boiled pasta; it is slightly fried and Yummmmmeeeeee

  • some peopole just like theyre pasta like that...

  • as always..... i liked the wrong one better -___-

  • wtf is a silky mouth feel and since when has shiny been a flavor?

  • That is actually the way I prefer pasta and I hate when people complaint about the sauce being already incorporated with the noodles and all. My roomate says that it's more delicious with the sauce on top but that's so wrong in my opinion. The flavour is pretty more distributed when it's cooked like this and you don,t end up with a lot of noodles and no more sauce.

  • @Azshara777

You are right. When you boil pasta in water it sucks in water (that is why it gets 2-3 times bigger). If you cook it in the juice of the sauce, pasta is filled with juice and taste better than plain water.

By the way, there is no point in fighting with people about cooking, let them have their food the way they prefer. You enjoy your food.

  • This series has caused a lot of wasted food. Just to show that we're "wrong"

  • NOM

  • This is actually helpful. unlike the other videos, it's straightforward and not snoopy.

  • the word "herb" has a fucking h in it.

  • @psykeo0 not everyone is british

  • @psykeo0 The word "psychology" has a phucking p in it!

  • mantecare means mix. it is done to finish a risotto with parmesan and butter in order to emulsify them with the rice. you do not mantecare pasta... I think CHOW needs to get real chefs on board..

  • Comment removed

  • mantecare means marinate!

  • @elliotphotography Mantecare means to whisk or mix. Marinare means to marinate.

  • FINALLY someone who does it right. THANK YOU.

  • all that fat, no wonder americans are so fat, geez

  • @JogBird commenting hate insted of syaing it to our faces? no wonder canadians never fight in war

  • @CuCuCahoo We also aren't stupid. Though the first commenter is just as wrong.

  • I'll do what I please.

  • someones a dirty mungacake .....

  • Haha show tits!

  • You guys have to eradicate this from CHOW.

I hate it, not only does it come as total condescending lecture, it isnt absolutley true.

Listen my parents are both professional chefs and they've taught me how to make the BEST spaghetti with ease.

They ALWAYS despise it when people mix the noodles with the sauce. Mix some fo the noodle water in the sauce for that starchy flavour but when cooking with ANYTHING beside penne or small shaped noodles keep them seperate.

    Anywho I still love CHOW

  • @DoctorWha my family owns 6 Italian restaurants and the correct way is to drain the pasta put it back in the pot and pour 3/4 of the sauce in with the pasta mix then u serve a little bit of sauce on the top and put your parmigiano reggiano

  • @DoctorWha Too bad. I'm Italian. You're doing it wrong. And professional chef just means it's their job to cook, even in some amateur "Italian" place. I've seen what American "Italian" restaurants are. If there's one thing they have close to nothing to do with, it's Italian cuisine.

This video is completely right. Just saying.

  • i'm watching chow you're doing it wrong cos i wanna have a good laugh at the comments

  • Finally, another slightly less pretentious "You're doing it all wrong"!

  • RIGHT at 1:01 i love the shiny flavor

  • Lol, i love all the haters. If you don't agree, just don't do it. But you can't deny that finishing the cooking with your sauce does make them absorb the flavour. And for spaghetti, use a kitchen pince, dont be dumb.

  • but I like putting the sauce on top...

  • As much as I would like to agree, I have no the filter.

  • Draining the Pasta is RIGHT! You can just snatch some water from the pasta while it's cooking. Plus, you can't scoop out spaghetti with a strainer. And I love my sauce on top, you get a lot of good flavor!

  • WOP from NY here. My grandfather who was born in Itay rinses the pasta as do I to prevent afetr-cooking. To each his own I guess...unless you are this guy then anyone that doesn't agree with him is "doing it wrong".

  • I am Italian, and I approve this message.

  • per questo ragazzi è meglio mischiare un po' di ragù all'interno della pentola dove si è cotta la pasta, e dopodichè aggiungere un po' di ragù sui piatti per decorazione ;)

  • that's how i always cook my pasta because i felt it tasted better that way.

  • i'm italian your doing it all wrong !

  • He's claiming that this is the proper Italian way but it's not. It's not even the right amount of sauce.

  • i actually make it that way...glad i know my food :)

  • there's also a psychological thing about doing this. It makes your pasta look more full and makes your brain think that you have more than you actually have. I started making pasta this way since I moved out. My mom always complains I'm doing it wrong, but I don't blame her.

  • I'm italian... I always put sauce on top of my pasta... I don't have the time to MANTECARE (not manticare) my pasta... nobody does this in italy :S it's gross... olive oil and butter?! it's like lemon and chocolate!

  • @sonogigs Heh, you don't know Italy that well then. ;P We don't put olive oil and butter though. At least I don't know anyone who does. What do you mean about it not being fast? At max it adds another minute to the cooking time.

  • Comment removed

  • @sonogigs The word does exist. x'D

  • lol so i'm making pasta right.

  • i can't see video

  • Let me qualify that at many casual restaurants and a lot of ravioli dishes are sauced with out being tossed in the pan but you eat at any of the michelin star restaurants THIS is absolutely the way they do it.

  • @zsimon21 I'm not saying you don't have to toss pasta in the sauce pan.. trust me, I hate 'white pasta with sauce on top'. I'm just saying that after you mix pasta with sauce, a little bit of sauce on top of the dish is expected... and yeah, I'll stick to my opinion as well, butter will definitely alter the flavour of the ragù (sauce)...

  • @bubba94716 Yeah I've worked all over the country as has Carmellini, Batali, Robbins, Conant, Cossentino and any of them will tell you for the type of pasta dish he is cooking it is the right way. There are dishes few and far in between where you won't, or in a casual family situation you might not. I don't pretend to know everything but if someone tells me 2+2=5 you don't have to be a know it all to know it's wrong. So yeah Bubba, I stand by my original statement

  • Add butter? I bet half the people that got up to that point stopped watching your video. Might as well talk to their cardiologist!

  • You people are all fools. It continues to amaze and infuriate me that you would much rather wallow in your own ignorance, and keep eating your AT BEST mediocre food. Do you people even know who Andrew Carmellini is? The depth of his food knowledge? His culinary pedigree? Have any of you spent time working in a REAL KITCHEN and I don't mean a restaurant I mean a three or four star NYT or Michelin starred restaurant? A pox upon all your houses.

  • @zsimon21 keep the 'fool' for yourself, I don't care who this "Andrew Carmellini" is, all I know is he's not cooking pasta properly. Have you ever been to Italy? If not you should definitely come , your culinary beliefs will change. Sorry to say this dude, but pasta simply doesn't belong to your cultural heritage, you can stop pretending you know everything.

  • His way actually looks kinda nice, I might try it.

  • doing so, your pasta will taste like butter, that's definitely too much.

here's what I do: once I strain pasta in the colander I throw the water away and put pasta right back in the pan where I cooked it; then I pour some sauce to it and give it a stir. Then, you add pasta to the dishes and garnish it with the remaining sauce ;) Not everybody loves cheese and butter, sorry :)

  • This shit looks like shit.....his finished product looks like my finished product after I leave the can....Fuckin smart

  • but his sauce looks disgusting....

  • my mom does it the wrong way. oh well it's still freaking delicious so I don't care :D

  • Did he just say a little bit of alcohol?

  • If u cum while pulling ur dick out of a vagina creating a cream pie, then ur doing it all wrong

  • if you 2 and you 3 and your5 you doing it all wrong

  • My mum's been doing this since I could remember...

  • ur pasta looks dirty like ur forhed

  • @green14511451 that pasta looks really good

  • @green14511451 It's better to have a flavourful but kind of messy pasta than a sticky one!

  • @green14511451 Well you're a fuckin' asshole! =D

  • @green14511451 lol your comment made me lol the whole video i couldnt pay attention

  • @green14511451 AHAHAHAHAHHAHHAAHAHAAHA

  • The SAUCE BOSS

  • I guess my way is half right and half wrong:

cooking pasta and sauce at the same time

    draining pasta in a colander

    putting it on the plate

    sauce on top

mixing it to coat pasta evenly

    topping with grated cheese

  • Well said!

  • lol dat pasta looks great

  • I put ketchup in my pasta.

  • Actually the starchy water allows the sauce to bond with the pasta more. The water will be incorporated into the sauce and then the starch in both the sauce and pasta will bind. Mantecare is a technique normally applied to risotto to release its starches.

  • I've always put the sauce on the pasta, and run cold water over the drained pasta :( Now I know that's wrong.

  • It's sad the people are getting paid to show us common sense, not just this video, all of the videos they produce. Plus they look sad as shit when they say "You're doing it all wrong!"

  • wow im getting hungry!

  • shiny flavor?

  • @freelancergin the girl from Twilight knows how that taste like. lol

  • @freelancergin Let's ignore the actual good things contained in a video intended to teach you how to cook, and instead try to feel smart by critisizing tiny insigificant details. I can just imagine your life.

  • shiny yummy flavor?

  • We do it a different way at our restaurant. Instead of draining the pasta completely and then adding some of that starch water after, we don't drain the pasta completely so it still holds some of that water and then we put it into the sauce in a pan over low heat. It saves like 20 seconds with each order.

If it's a stringy pasta we just grab it with a tong, give it a couple of shakes and into the saucepan. It's even quicker that way.

  • 1. LICK SCREEN

    2. TASTES LIKE JIZZ

    3. ????

    4. PROFIT!

  • This serious is hilarious. Like there is ONE way to do things. Different cultures and different families eat differently. There is no CORRECT. Silly.

  • @memnoker There may not be one right way, but he certainly did show some very wrong ways.

  • I'm happy my parents know how to cook! I've done pasta this way all my life XD

  • now i know!!!!! all these years !!!!!D=

  • thats a plate of good looking pasta , yummy too i bet

  • He does get it right for the most part, but I don't know about the butter....

I haven't yet come across any pasta recipes that call for butter. I checked my Marcella Hazan book and she makes no mention of it. Batali doesn't add butter either. Perhaps it's regional?

  • so if ur having a party and some want sauce and some don't, you are expected to make 2 just because doing it the "wrong way" obviously makes it taste horrible.

  • @iamthelardbucket Why do you have make two? Just make one and put aside some pasta before you sauce it for those who don't want sauce. LOL.

  • @JohnWoo The video says not to wait..

  • @iamthelardbucket He said not lo let the pasta get cold and sticky before you sauce it. Since you're not saucing the plain pasta you want to put aside for people who don't want the sauce, it's irrelevant.

  • tasty thing )))

  • I watched this for like a minute

  • There goes my diet...

  • that does look amazing!

  • dunno about you but i don't really like eating silk

  • I'm Italian and the "mantecare" is not that kind of way!! If you add butter and a lot of olive oil the pasta will be fat and full of kalories.

  • Sea salt the pasta water. Put olive oil in the hot pasta. If you dont want to give up any flavor yet not be a fat ass.

  • My grandma ALWAYS put margarine in the pasta...OH that was sooo yummy!!!

  • @TheKarenality

    do NOT use margarine =/

  • okay but then when you put it in the fridge and warm it up the next day its not the same texture. i usually do it separate so the textures stay the same (more or less)

  • I only disagree about the part where you said to add butter and olive oil. Thats just not necessary, all this fat! Although sometime I will oil my pasta a bit to prevent it from sticking if my timing with the sauce was off.

  • @PlatypusGuitar adding fat makes it taste a lot better and is also very good for you

  • @logos2600 how is adding butter good for you?

  • @nwLohmann it has tons of calories so its good for underweight people who want to gain weight and/or muscle. Also fat is actually really useful for the body, its used to make hormones like testosterone. I don't eat a lot of saturated fats like butter, but new research is showing that heart disease is caused by lack of exercise and refined carbs (sugar, white flour) rather than fat. google "weston price guts and grease" for an example of pro-fat arguments

  • now i'm hungry...

  • @dapletd

Well maybe this isn't obvious to some people, regardless of whether they like it or not?

  • @dapletd

Hey if you like watery sauce dumped on top of rubbery pasta, more power to ya

  • This is so true!!!

  • now I know My mom taught me the wrong way ._.

  • That pasta looks very delicious! Great video!

  • this is how I do it :D no butter for me though, unless it's a cream sauce

  • My mom mixes pasta all wrong. *goes to show her the video*

  • @EoinTheInsomniac rip dear child

  • @maritimetimes - lol !
