This is almost the way we do it in my family but we only half-cook the pasta then we add butter, herbs, pepper, salt, fried garlic (and anything else we like) to the sauce and cook it on low heat for a few minutes before we add the warm (well drained) pasta to the mixture, and then we cook it on low heat for 4-5 minutes so that the pasta is fully cooked and suck in some of the juice. It is delicious and pasta does not taste like boiled pasta; it is slightly fried and Yummmmmeeeeee

You are right. When you boil pasta in water it sucks in water (that is why it gets 2-3 times bigger). If you cook it in the juice of the sauce, pasta is filled with juice and taste better than plain water.

mantecare means mix. it is done to finish a risotto with parmesan and butter in order to emulsify them with the rice. you do not mantecare pasta... I think CHOW needs to get real chefs on board..

Draining the Pasta is RIGHT! You can just snatch some water from the pasta while it's cooking. Plus, you can't scoop out spaghetti with a strainer. And I love my sauce on top, you get a lot of good flavor!

there's also a psychological thing about doing this. It makes your pasta look more full and makes your brain think that you have more than you actually have. I started making pasta this way since I moved out. My mom always complains I'm doing it wrong, but I don't blame her.

here's what I do: once I strain pasta in the colander I throw the water away and put pasta right back in the pan where I cooked it; then I pour some sauce to it and give it a stir. Then, you add pasta to the dishes and garnish it with the remaining sauce ;) Not everybody loves cheese and butter, sorry :)
Actually the starchy water allows the sauce to bond with the pasta more. The water will be incorporated into the sauce and then the starch in both the sauce and pasta will bind. Mantecare is a technique normally applied to risotto to release its starches.
It's sad the people are getting paid to show us common sense, not just this video, all of the videos they produce. Plus they look sad as shit when they say "You're doing it all wrong!"

We do it a different way at our restaurant. Instead of draining the pasta completely and then adding some of that starch water after, we don't drain the pasta completely so it still holds some of that water and then we put it into the sauce in a pan over low heat. It saves like 20 seconds with each order.
If it's a stringy pasta we just grab it with a tong, give it a couple of shakes and into the saucepan. It's even quicker that way.
He does get it right for the most part, but I don't know about the butter....
I haven't yet come across any pasta recipes that call for butter. I checked my Marcella Hazan book and she makes no mention of it. Batali doesn't add butter either. Perhaps it's regional?
so if ur having a party and some want sauce and some don't, you are expected to make 2 just because doing it the "wrong way" obviously makes it taste horrible.

okay but then when you put it in the fridge and warm it up the next day its not the same texture. i usually do it separate so the textures stay the same (more or less)
I only disagree about the part where you said to add butter and olive oil. Thats just not necessary, all this fat! Although sometime I will oil my pasta a bit to prevent it from sticking if my timing with the sauce was off.
@nwLohmann it has tons of calories so its good for underweight people who want to gain weight and/or muscle. Also fat is actually really useful for the body, its used to make hormones like testosterone. I don't eat a lot of saturated fats like butter, but new research is showing that heart disease is caused by lack of exercise and refined carbs (sugar, white flour) rather than fat. google "weston price guts and grease" for an example of pro-fat arguments

cooking pasta and sauce at the same time
draining pasta in a colander
putting it on the plate
sauce on top
mixing it to coat pasta evenly

Actually the starchy water allows the sauce to bond with the pasta more. The water will be incorporated into the sauce and then the starch in both the sauce and pasta will bind. Mantecare is a technique normally applied to risotto to release its starches.

We do it a different way at our restaurant. Instead of draining the pasta completely and then adding some of that starch water after, we don't drain the pasta completely so it still holds some of that water and then we put it into the sauce in a pan over low heat. It saves like 20 seconds with each order.
If it's a stringy pasta we just grab it with a tong, give it a couple of shakes and into the saucepan. It's even quicker that way.

He does get it right for the most part, but I don't know about the butter....
I haven't yet come across any pasta recipes that call for butter. I checked my Marcella Hazan book and she makes no mention of it. Batali doesn't add butter either. Perhaps it's regional?

I'm Italian and the "mantecare" is not that kind of way!! If you add butter and a lot of olive oil the pasta will be fat and full of kalories.

I only disagree about the part where you said to add butter and olive oil. Thats just not necessary, all this fat! Although sometime I will oil my pasta a bit to prevent it from sticking if my timing with the sauce was off.

@nwLohmann it has tons of calories so its good for underweight people who want to gain weight and/or muscle. Also fat is actually really useful for the body, its used to make hormones like testosterone. I don't eat a lot of saturated fats like butter, but new research is showing that heart disease is caused by lack of exercise and refined carbs (sugar, white flour) rather than fat. google "weston price guts and grease" for an example of pro-fat arguments
