@crosiac100 you're not really "drinking" sake... and there's such a small amount that it's quite negligible. Also, the gyoza is cooked and the meat is thoroughly cooked, so the sake's alcohol level shouldn't be a problem (alcohol cooks off/evaporates)
I just made this today and it was AMAZING!!! They tasted like I got them from a restaurant. I didn't even get a chance to make the sauce because the dumplings were so good without it. I added kale to the cabbage just to get more greens in there and I used ground turkey instead of pork. A little goes a long way with this because you can only put a little bit in each dumpling otherwise it won't close all the way. Thanks for the recipe!!! Fantastic!!

i don't know which part of China you are from, but in southern part of China, for example Guangdong . we do have this kind of fried dumplings for long long time, and yeah , we love it alot.
This isn't the sui-jiao versions of chinese dumplings are they? I was wondering what's with the cabbage. Maybe I'm more oriented with the shanghai style dumplings.

I would like to make some for my friends and it would spare me a great deal of work and stress if I could just put the ready to fry dumplings in the fridge and cover them with a damp kitchen towel or something.

@CookingWithLiccy That's rather strange, because you can usually get premade gyoza skins if you can get premade wonton skins - they should sit quite close to each other in the fridge section (with the gyoza/jiaozi/chinese dumplings always circular in shape) :-o
well i asked the asian guy in the asian place in my area if he sells gyoza skins and he didnt know what i was talking about... so i said its like a thin pastry..and he gave me won ton.. and i tried it and its really nice but won ton is square shaped.. not circular.. thanks for replying btw :) xx
@CookingWithLiccy You're welcome. Try a different name next time and maybe you'll be able to get it. Wonton and jiaozi skins have very different textures, and I think the latter tastes better when fried :-)
I want to try making these at some point. The ones that I buy frozen in the store are really good, I can't imagine how awesome they'd taste homemade. =D

for the cabbage its better to put it in a paper towel and squeeze, it gets more of the water out. a dish towel works too. just a helpful hint.
