i don't know for sure, but i don't think he was so much bothered about the reduction as he was the smoke effect. As you can see later in the video he was scraping off the glaze which was used as a resist, allowing the smoke to create the patterns on the surface, he then polished up what was by then a mostly unglazed pot. Hope that makes sense.
He could afford to let it the pot cool longer because he was obviously not looking for metallic flashing or chemical reactions in the glaze (typical reduction effects), he was just looking for carbonization (ie unglazed surfaces such as crackles in glaze and the bottom of the pot, turn black from carbon). If you are just looking for crackle, and not really any glaze reduction, you can actually take the pot out at a much lower temp, but a temp still hot enough for carbonization to take place.
I think you meant to say oven, if so that was probably because he was waiting for us to get it together with the camera (we'd been inside the house drinking wine and talking so were a bit disorganized)
well done.

Nice piece. I was wondering why you took so long to
get the piece into the reduction chamber, but at the
end I realized this was a piece done in the 'naked raku'
style and that you'd be scraping off the glaze coating.
