Skorch you forget, you can counter attack enemies that have weapons with your fists equipped and Disarm them, and steal their weapon ^^

skorch try hiring some courtisans and sending them at rhe gaurds the guards will turn there back and you can sneak in it get the codex page

The hidden blade is a hard weapon to counter with. It doesn't tell you in the game, but you gotta push a direction on the left thumbstick AND hit square at the same time, otherwise Ezio sits there and takes it.
