  • Glad you like burdock. There are lots of other wild foods equally good, some on my site, and in my books (which I sell, signed on my site—otherwise the book industry gets all but a few pennies of all the money).

    Don't forget to peel and parboil burdock's immature stems in mid-spring. They're great too.

  • When I first started eating living foods in '81/2 while living in Brooklyn, I remember hearing about this man in my veg circles. Later, I would learn of his foraging tours in Central Park , his request that followed, and NYC hiring him to do exactly what he was doing when he was arrested....Koch's idea? Anyway, he was Manhattan's gem, and I wish I had taken his courses...how fun they must've been. Now I'm 57. I need to learn to forage Golden Gate Park...help!

  • It wasn't Koch's idea to hire me after I was arrested. It was food writer and broadcaster Arthur Schwartz, who suggested it to Henry Stern, the parks commissioner who had undercover agents infiltrate my foraging tour and arrest and handcuff me for eating a dandelion. I left the Parks Dept. in 1990 and lead freelance tours throughout the Northeast, mostly in the Greater NY area, but certainly not exclusively in Central Park.
