@koko8maroco - a cast member behind the scenes is trained to operate the computer programme that animates Stitch and provide his voice live. Hidden cameras monitor the audience and there is a cast member on the floor walking around with a microphone so that children can talk back. I was there two weeks ago and Stitch said I'd escaped from space prison and showed my face on a wanted poster behind him.
