  • And, you may not recognize, to cook unagi dish well require several years of training like other traditional food. So if you not afford to try several dishes(means around$100), must go to famous restraint going on one hundreds of years or two. I think Tokyo or Hamamatsu(or odawara )region is the best place for this delicacy.

  • Unagi is one of the most popular food in Japan, everylone love them! But unlike other Japanese food, it is very fatty, and extremely expensive(20US$ for one unaju dish typically). Vbut I believe it is worth to spend, since it is one of the best taste delicacy in the world without doubt.

    Basic ingredients are soy sauce and mirin. Mirin is a cooking sake, it adds the different sweetness you get from sugar and the glaze.

    Try mixing them 1:1 for the starter, then add or subtract two ingredients above and add sugar or salt for your liking.

  • This little family-run store was closed recently. The family went back to their country home. Unfortunately there are no good Unagi places which use charcoal near here any more. Cooking over gas just doesn't make it.

  • The liquid is called "tare" in Japanese meaning sauce, which consists of the usual suspect for all Japanese cooking; soy sauce, probably brown sugar in this case and sake or mirin. This concoction is supposed to be a secret for each vendor. I remember seeing them cooking this liquid outside over charcoal fire before. But I don't think they use charcoal to cook the liquid nowadays.
