  • cook some chicharron (fried pork rinds) in some chicken broth to soften them. then fill the empanada with the softened chicharron and fry the empanada. this is a good filling too. my auntie told me that before the war people made empanada of many different types. its sad the we have lost many good recipes since then. lets be more creative like our ancestors and put more variety in Chamorro food.

  • i got so tired of eating the same type of empanadas. so i decided to make different kinds with different fillings. i dont flavor the masa with achiote and it tastes more of the corn and actually like it better. then i fill it with various things. ive tried beans, rice, cheese. refried beans. fish and vegetables, and even mango filling. next fiesta i will prepare a variety of empanadas.
