Wouldn't it had been better to show where to place the thermometer in a turkey, on a flat surface, and not in a roaster pan where the insertion is not clear at all? A close-up of this insertion with the turkey being on a flat surface would be a great plus! Otherwise, your demo was a wasted time. Sorry!

If the thigh goes to 180 the breast will dry out as you have not covered it.
