The good thing with Salami is that it will happily keep in a sealed bag in your warm panniers - I tend to go for a supermarket version, simply because I know it's got some preservatives in it - not what I'd normally buy but a good back up.
Otherwise I just buy it on the road as I'm going along, it's my basic staple - that and laughing cow cheese triangles :-)
@matthewcashmore Hi mate, you say you can keep it in your panniers without a coolbox which is right. However, does it have to be put in the fridge once opened? Thanks alot!
