The main difference with hdmi is the colours are a lot more vibrant and a slightly faster refresh rate. Whereas with component you you get a higher contrast and brightness levels.
You need to try both and see which one's best for the the type of television your using and the types of games you play..

@germansold21 No, there isn't much difference in video quality but only a few pixels. What makes the difference is the true color and digital audio (vs component RCA audio 'Red and white cables'). Don't bother with component, stick to hdmi all the way.

My TV is 720p and it looks MUCH better with component than HDMI... the HDMI looks kind of pixelated unless I change to a resolution that stretches off the screen. So I cant get a quality signal with HDMI, I have messed with ALL settings on the xbox and my tv... it sucks but yea component looks great for now, but I would like to get the issue resolved.

well so far the problem i found was the 1080p option when your using component. its not possible unless your tv is crappy. the highest resolution you can get is 1080i but its the HDMI is what should be giving you full digital 1080p.

go to your xbox settings -> display -> and just change the quality to 480p, then back to 1080p or whatever you are using.
the sounds lower itselfs with hdmi, and if that doesnt work, your hdmi cable doesnt work on your xbox

HDMI sends audio signals along with the video signals. So just connect it with the HDMI.
